Here’s how to make the Junbi matata in under three minutes.
The recipe: 1 cup cooked rice 2 large garlic cloves, peeled, grated 3 large carrots, peeled and cut into 1/2-inch cubes 4 cups fresh spinach 1/4 cup white wine 3/4-cup heavy cream 2 teaspoons chili powder, crushed 1/8 teaspoon ground cumin 1/3 cup finely chopped fresh ginger 2 cups shredded carrots 1/6 cup sweet potato or zucchini 3/8-inch dice of peeled tomato 3 tablespoons olive oil 2 tablespoons cornstarch or rice vinegar For the sauce: 1/5 cup finely grated carrot 1/7 cup finely diced sweet potato (or zucchi) 1/1 cup finely minced garlic 1/16 teaspoon ground pepper 2 teaspoons dried oregano 2 teaspoons fresh basil, finely chopped 2 tablespoons finely chopped red pepper flakes 1/15 teaspoon salt For the pasta: 1 lb shredded carrots 3 cups cooked rice 1/24 cup pasta sauce (or chicken stock) 1 cup chopped fresh basil leaves (or 1 tablespoon chopped fresh rosemary) For the noodles: 2 tablespoons olive, coconut, or other oil for frying 1 cup shredded fresh ginger 1 tablespoon finely chopped garlic 1 cup minced scallions, finely grained For the toppings: 2 cloves garlic, finely minced 1/10 cup finely shredded sweet potato, or zukchi 1 tablespoon fresh basil For more information on cooking and the best ways to prepare food, visit our recipe page.
